Bouillabaisse- French Seafood Soup
Ingredients
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced or 1 leek, white part only, ends trimmed, thinly sliced
  • 2 garlic cloves, crushed
  • Large pinch of saffron threads
  • 2 cups chicken stock
  • 1 cup tomato based pasta sauce (I used chunky vegetables)
  • 2 sprigs rosemary or thyme
  • 2 tsp orange zest
  • 2 bay leaves
  • subheading: ½ tsp chilli powder:
  • subheading: 300 g firm white fish fillets (fresh or frozen), cut into small cubes:
  • 16 to 18 small/medium prawns, cleaned (fresh or frozen)
  • salt and pepper to taste
  • A few sprigs of rosemary and a handful of parsley for garnish
  • Crusty bread to serve
