- ¼ tsp ground cumin
- ¼ tsp ground nutmeg
- 1 tbsp fresh lemon juice
- Handful of dried apricots
- 1 small red onion
- 10 plum tomatoes
- 2 handfuls of rocket leaf salad
- 1 small bunch fresh parsley
