Ingredients
  • 1¼ tsp fennel seeds
  • 1¼ tsp black mustard seeds

  • 2 onions, peeled, cut in half and finely sliced into half moons

  • 8 curry leaves, plus extra to garnish
  • 1.2 kg tomatoes (ideally a mixture of 1kg vine and 200g yellow baby plum)
  • 1½ green finger chillies, very finely chopped
  • 4 garlic cloves, peeled and crushed
  • 2½ tsp tamarind paste
  • 400ml tin coconut milk
