Potato and Mushroom Gratin with Brie
Ingredients
  • 1 Tablespoon oil
  • 350 g (~ ¾ lb) mushrooms, thinly sliced (I used a mixture of chestnut, baby portobello, and button)
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon ground nutmeg
  • ½ vegetable stock cube, crumbled
  • 450 g (~ 1 lb) potatoes
  • 1 Tablespoon butter
  • 250 ml (~ 1 cup) cream (I used single cream)
  • 200 g (~ 7 oz) brie, sliced
  • Fresh parsley, to serve (optional)
