Instant Pot Corned Beef and Cabbage

Ingredients
  • 2 to 3 LB corned beef (with seasoning packet)
  • 1 ½ cups beef broth
  • onion (quartered)
  • 1 head of cabbage (cut into 6 wedges)
  • 2 tsp. crushed garlic
  • 1 lb bag baby carrots
  • 1 lb bag baby potatoes
Steps
  1. Place trivet in Instant Pot.
  2. Place quartered onion on top of trivet.
  3. Pile garlic on top of onion.
  4. Rest rinsed/dried corned beef on top of onion/garlic pile.
  5. Top beef with seasoning packet.
  6. Pour beef broth on side of beef.
  7. Apply Lid/set to manual/make sure knob is set to pressure.
  8. 70 Minutes on high pressure.
  9. Natural release for 15 minutes.
  10. Remove beef and slice against grain.  Put in casserole dish and cover with 2 cups of broth.  foil cover.
  11. Remove Trivet from IP.
  12. Add carrots/potatoes and cabbage wedges to IP.
  13. Manual high pressure for 3 minutes (will take a few minutes).
  14. Natural release for 10 minutes.
