Recipe for 6 Teriyaki Chicken Pocket Sandwiches.
Ingredients
  • Prepare the sauce in a bowl)
  • 2 tbsp light soy sauce.
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tsp dark soy sauce
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • juice
  • 3 tsp sugar.
  • (Prepare the chicken)

  • Thank all for the interest. The 2cm thick bread came in a 6 pieces packing, I bought it from 4leaves.

  • I used one piece of boneless chicken thigh for 3 thick toasts 2cm thick.
  • Ī butterflied some portion of the thigh to make it flatter. Sear it in a pan with skin side down, turn over after the skin side is lightly browned and cook the other side for another 1 to 2 mins.
  • Pour the prepared sauce over the chicken and cook till sauce thicken. Keep turning the chicken once awhile so tat the surface is evenly coated.
  • Cut chicken into 6 small pieces.
  • Due to some chicken part are thicker, trim it thinner for easier stuffing in to bread.
  • Toast the breads with buttered surface for easier handling. Cut a slant half then cut a slot opening using a small knife. Be careful not to cut through.
  • First put in the butterhead lettuce, squeeze in some Japanese mayo, stuff in the teriyaki chicken and garnish with a cucumber.
