Kung Pao Chicken
Ingredients
  • 2 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup low-sodium soy sauce, divided
  • ⅓ cup rice vinegar or sherry vinegar
  • 1 Tbsp hoisin sauce
  • 1½ Tbsp white granulated sweetener or sugar
  • 2 Tbsp cornstarch
  • 2 Tbsp toasted sesame oil
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 bunch green onions, white and green parts, cut into 3-inch pieces
  • 1 Tbsp minced fresh ginger
  • 2 Tbsp minced garlic
  • 10 dried red chili peppers
  • ¼ cup dry roasted peanuts
