Not only are they high in protein, but they are also super simple to make in just 15 minutes with ingredients you probably have at home right now.
They quickly became my staple when I want to offer something sweet to guests without them noticing it is a "health" food.

Ingredients
- 80 g oats, rolled
- 30 g protein powder (I used salted caramel)
- 60 g apple, grated
- 50g carrot, grated
- 150 ml of water
- 1 tsp of baking powder
- 1 to 2 tsp gingerbread spices (optional, you can also use
- 10g cacao nibs or crushed cacao beans
- 10g fresh coconut meat
Steps
- Grate carrot and apple
- Add all dry ingredients to the bowl and mix well.
- Pour 100ml of water and mix. If the mass is too thick, pour water over one tablespoon and mix until a creamy consistency is reached.
- Fill the cupcakes - I used 50g for my cupcakes.
- Microwave them for about 8 minutes on the medium-high setting, uncovered. When removed from the microwave, the cupcakes will be relatively moist and gummy but will solidify when cooled.

- Fresh coconut meat has about 60% caloric content compared to dried coconut
