Brazilian Salmon Stew (Moqueca)
Ingredients
  • subheading: For the marinade:
  • Cloves from ½ head garlic, peeled, crushed, and minced
  • 2 tablespoons fresh lime juice
  • ¾ teaspoon coarse salt
  • 1 tablespoon sweet paprika
  • 2 ½ teaspoons ground cumin

  • 1 ½ to 2 pounds salmon, cut into 2-inch pieces (largish bite-sized pieces)
  • Extra virgin olive oil
  • 2 medium onions, sliced
  • 1 large green bell pepper, seeded, de-stemmed, and sliced
  • 2 medium tomatoes, sliced
  • Salt and freshly ground pepper
  • 1 ( 14- ounce) can regular  coconut milk (not light)
  • 1 large bunch fresh cilantro, chopped ( 1 to 2 cups), divided
