Instant Pot Glazed and Grilled Ribs

  • 4 lb. St. Louis-style pork spareribs, cut into 3- or 4-rib sections
  • ¼ cup mirin (sweet Japanese rice wine)
  • Glaze and Assembly
  • Vegetable oil (for grill)
  • 2 Tbsp. distilled white vinegar
  • 2 Tbsp. Sriracha
  • 1 Tbsp. fish sauce
  • 1 Tbsp. sugar
  • 2 3" pieces ginger, scrubbed, bruised with the dull side of a chef’s knife, sliced into ½"-thick rounds
  • Kosher salt (optional)
