Bacon Wrapped Pork Tenderloin
Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 1 medium apple , peeled and cut into a very small dice (about 1 cup)
  • ⅓ cup finely diced sweet onion
  • 2 cloves garlic , minced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper , to taste (about ⅛ teaspoon each)
  • 1 to 1 ¼ pounds pork tenderloin
  • 12 ounces bacon (8 to 10 strips), cut in half
