Vegan Spicy "Chicken" Sandwiches

Transitioning from 80% raw food to Whole Food Plant Based diet (WFPB) ***Cooking without oil and adapting my recipes accordingly***

1 Can(15oz.) Cannellini Beans

1 Tablespoon Olive oil

⅓ Cup Vegetable broth

2 Tablespoons Soy sauce

2 teaspoons Chili paste or sriracha

1 Cup Vital wheat gluten

⅓ +½ Cup Panko bread crumbs, divided

1 teaspoon Salt

½ teaspoon Cayenne pepper

½ Cup Plain bread crumbs, vegan

1 teaspoon Red pepper flakes

½ teaspoon Chili powder

subheading: For the Spicy Mayo:

⅓ Cup Vegan mayo, I used Hellman's

2 teaspoons Hot sauce, I used Franks

subheading: For the Sandwiches:

4 Hamburger Buns, vegan

4 Slices Vegan pepper jack cheese, I used Follow your Heart
