Ingredients
  • 2 lbs lean ground turkey or shredded chicken
  • 1 onion, chopped
  • 4 cloves garlic, minced or pressed
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 8 oz.  baby bella “crimini” mushrooms, sliced
  • 1 - 14 oz  can diced tomatoes
  • 1 - 32 oz  of reduced-sodium tomato juice
  • 1 Tbs. fresh lemon juice
  • 1 - 14 oz. can black beans, rinsed and drained
  • 1 Tbs. ground cumin
  • ¼ tsp. cayenne, or to taste
  • ½ cup each fresh cilantro, chopped
  • ¼ cup parsley, chopped
