Ingredients
  • 2 tbsp Cardamon pods (the green kind sold by Indian grocers are best)
  • 3 tbsp Vegetable Oil
  • 2 lbs boned shoulder of Lamb , cut into 1-inch cubes
  • 2 large Tomatoes , chopped
  • ¼ cup finely chopped Onion(s) (red onions or shallots are ideal but any onions will do)
  • 1 ½ tsp store-bought garam Masala
  • 1 tbsp Tomato Paste
  • 1 ½ tsp Salt or to taste
  • Lots of freshly ground Black Pepper
