Kristie's Southern Summer Tomato Pie
Ingredients

  • 3 ounces Parmesan cheese grated (about 1 cup)
  • 1 large egg
  • 2 tablespoons bacon fat coconut oil, ghee, or unsalted butter, softened.

  • 5 large tomatoes peeled and sliced
  • ⅓ cup cooked bacon chopped
  • ⅓ cup onions finely slivered
  • ½ cup mayonnaise
  • 4 ounces cheddar cheese shredded (about 1 cup)
  • ½ teaspoon dried basil
  • ¼ teaspoon dried oregano
