Lamb Burgers (à la souvlaki) with Tzatziki

Ingredients
  • subheading: Patties:
  • 600g Minced Lamb Meat
  • 1 tbsp (15ml) lemon juice
  • 45g mixed chillies
  • 14g (4 cloves) garlic
  • 25g fresh ginger
  • 25g fresh coriander
  • 1tsp tummeric
  • 5g Gram Masala
  • 2 tsp ground cumin
  • 10ml sesame seed oil
  • salt and pepper to taste

  • 170g greek yogurt (Fage)
  • 200g fresh green cucuamber
  • 10g (3 cloves) garlic
  • salt and pepper to taste
  • zest of 1 lemon
Steps
  1. subheading: Burgers:
  2. Blend oil, de-seed chillies (if you like your food spice leave some seeds in), garlic, ginger, fresh coriander, lemon juice and all spices in a food processor.
  3. Mix the paste into the mince and form 8 small patties.
  4. Fry them or grill them.
  5. subheading: Tzatziki:
  6. We need to avoid any excess water. The best result is achieved by peeling and de-seeding the cucumber, but if you are in a rush just grate it and pat with paper towel to remove any additional moisture.
  7. Combine the yogurt, cucumber, lemon juice and garlic.
  8. Place in the refrigerator for at least 2 hours for the flavours to fully develop.
