Mexican Chicken and Rice

  1. Rice
  2. 2 cups jasmine rice
  3. Vegetable oil
  4. 4 cups water
  5. 4 Roma tomatoes
  6. 2 cloves garlic
  7. 1 Chicken boullion cube
  8. 1 Tomato bouillon cube
  9. Cumin
  10. Salt
  11. Onion powder
  12. Brown rice in vegetable oil till light brown. In a blender add the water, tomatoes, garlic, all the spices and seasonings. Blend very well add to the rice once its browned. Stir once bring to a boil, reduce heat to simmer, cover and simmer for about 20 mins or until all the water is gone. Do not stir or uncover while it is cooking.

  14. 3 to 4 chicken breast cut into smallish pieces
  15. Vegetable oil
  16. Cumin
  17. Chili powder
  18. Garlic powder
  19. Onion powder
  20. Salt
  21. Cayenne pepper
  22. In a skillet heat vegetable oil
  23. Toss chicken pieces with the above seasonings using you're spirit guides suggestions for measurements lol.
  24. Fry the chicken pieces until golden brown.
  25. Cheese sauce
  26. 14 oz pack of quesadilla mexican melting cheese
  27. ½ cup of milk
  28. 2 tablespoons butter
  29. 1 can green diced chilies
  30. ½ garlic salt
  31. ½ teaspoon cumin
  32. A pinch of cayenne
  33. In a double boiler add the cheese, milk, and butter.
  34. On medium low heat cook it till the cheese is melted and milk is combined with it. Then add the green chilies, and spices once it's done.
