Insta Pot Chocolate-Zucchini Muffins
I am extremely happy!!!! I just made a zucchini chocolate cake in my instant pot and it came out perrrrrrfect :)  Normally this recipe is for making 12 muffins in the oven (Happy Herbivore recipe). But I got tired of spooning out the batter in those little muffin tins. So I followed the recipe exactly except I put the entire batter into a metal container that fit into the instant pot with the trivet, added 1 c water, and covered the cake with foil so as not to get wet. I then put it on manual, high pressure, for 22 minutes, NPR. It is more moist then the muffins, easier, and more energy efficient than the oven. This recipe used no oil and no egg.  Yay!!
Ingredients
  • 1¼ cups whole wheat pastry flour
  • ¼ cup unsweetened cocoa
  • 1¼ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 whole banana, mashed
  • ½ cup raw sugar
  • ½ cup unsweetened applesauce
  • ¼ cup nondairy milk
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • ½ cup raw sugar (optional)
