Espresso Martini Cookies
Espresso martinis are everywhere, including in these boldly flavored cookies. Garnish them with flaky smoked salt or, if you’re feeling extra, give them a dip in white chocolate and sprinkle with chopped chocolate-covered espresso beans. Like its namesake cocktail, this cookie hits just the right balance of sweet and bitter notes, meaning it’s the perfect recipe for those who don’t have the biggest sweet tooth but still crave a holiday treat.
Ingredients
  • 2¼ cups all-purpose flour
  • ¼ cup unsweetened Dutch-process cocoa powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1½ cups light brown sugar
  • 2 tsp instant espresso powder
  • 2 large eggs
  • 1½ tsp vanilla bean paste or extract
  • ½ cup semisweet chocolate chips
  • ½ cup chocolate-covered espresso beans, plus more for garnish (optional)
  • Smoked flaky sea salt, for garnish
  • Melted white chocolate, for garnish (optional)
