Pasta with Chicken, Spinach, Tomatoes, and Feta Cheese
Ingredients
  • 4 ounce dried whole grain or whole wheat penne pasta

  • 1 teaspoon finely shredded orange peel
  • 2 tablespoon orange juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon-style mustard
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon canola oil or olive oil
  • 1 pound grape tomatoes, halved (3 cups)
  • 4 cloves garlic, minced
  • 10 ounce fresh baby spinach
  • ¾ cup crumbled feta cheese or goat cheese (chèvre) (3 ounces)
  • 3 tablespoon pine nuts, toasted
