Zucchini Lasagna (Without Noodles) Recipe (Keto!)

Ingredients
  • 2 ½ to 3 lbs zucchini (3 to 4 large, 9-inch long- see notes) 16 to 18 slices, cut to ⅓ inch thick.
  • olive oil, or spray olive oil
  • salt and pepper
  • subheading: “Meat” Sauce:
  • 2 teaspoons olive oil
  • 1 onion
  • 4 to 6 garlic cloves
  • ¼ teaspoon fennel seeds (optional)
  • 1 ½ lbs ground lamb, beef, turkey, or use a vegan substitute like Beyond meat, beyond beef crumbles, soy crumbles
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 3 cups marinara sauce (divided)
  • pinch chili flakes (optional)
  • 8 basil leaves, torn
  • subheading: Ricotta Mixture:
  • 15 to 16 ounces whole milk ricotta
  • 1 egg
  • ⅛ teaspoon nutmeg
  • 2 ounces pecorino romano - about ½ cup grated (divided)
