Bread Pakora (Potato Fritter Sandwich)
Ingredients

  • 3 tablespoons (45ml) neutral oil such as vegetable or sunflower oil

  • 1 medium yellow onion (8 ounces; 227 g), finely chopped
  • 1 small hot green chile, such as serrano or bird's eye, stemmed
  • ½ teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
  • ½ teaspoon ground turmeric
  • ½ teaspoon red chile powder, such as Kashmiri
  • 1 teaspoon chaat masala, homemade or store-bought
  • 1 ½ pounds ( 680 g) russet potatoes, peeled and boiled until tender

  • 3 ½ cups (14 ounces; 400 g) chickpea flour or "gram" flour
  • ½ teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground red chile powder, such as Kashmiri
  • ½ teaspoon carom seeds
  • 2 cups ( 470 ml) water
  • 8 slices white sandwich bread
  • 2 quarts (1.9L) neutral oil, such as vegetable or sunflower oil, for frying
