If you like the recipes I've saved, feel free to follow me. I love cast iron- restoring, collecting and using it, so I actively look for recipes that utilize cast iron in the preparation (though of course you don't really need special recipes for cast iron). Ingredients
- 1 cup quick oats, organic preferred
- ¼ teaspoon kosher salt
- ½ teaspoon baking powder
- 1 ½ to 2 teaspoons ground pumpkin spice, if you don't like pumpkin spice, use cinnamon
- 1 cup plus ½ tablespoon almond milk, or milk of your choice
- 1 teaspoon vanilla extract
- 2 large eggs, beaten
- ⅓ cup plus 1 ½ tablespoons low fat 2% plain Greek yogurt, (I like Fage)
- ¼ cup pumpkin puree
- 6 tablespoons brown monk fruit sweetener, or brown sugar (I used monk fruit)
- 1 tablespoon powdered sugar
