Ingredients

  • 1 cup (250ml) shiitake mushroom stock (substitute: unsalted chicken stock)
  • 3 tablespoons (42g) unsalted butter or olive oil , divided
  • 1 (207g) medium onion , diced
  • 4 (23g) garlic cloves , minced
  • 1 tablespoon (15ml) regular soy sauce
  • 1 tablespoon (15ml) fish sauce (substitute: regular soy sauce)
  • 1 teaspoon (1g) dried thyme
  • 2 (0.5g) bay leaves
  • 4 cups (1L) unsalted chicken stock
  • 1 cup (250ml) heavy cream
  • 2 tablespoons (16g) all-purpose flour
  • Salt and black pepper to taste
