  • 1 pound (450g) dried wheat noodles
  • 1 stick (110g) unsalted butter
  • 1 bunch Asian greens such as bok choy, white and green parts roughly chopped and separated
  • 8 cloves garlic, finely chopped
  • 4 large eggs
  • kosher salt
  • 2 scallions, finely sliced
  • 1 tbsp sesame seeds
  • sesame oil, to finish

  • Seasoning Sauce
  • 2 tbsp soy sauce
  • 2 tbsp vegetarian stir-fry sauce (or oyster sauce)
  • 2 tsp maple syrup or brown sugar
  • 2 tsp sesame oil
