  • 2 Cups Unsalted Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 Cup White or Brown Rice
  • Juice and Zest of 1 Lime
  1. Bring the broth and cumin to a boil.
  2. Add rice and stir. Lower heat to a gentle simmer and cover. Cook for 15 to 20 minutes until water is absorbed. Remove from heat and allow to rest for about 10 minutes.
  3. Add lime juice and zest to the rice and fluff with a fork until mixed. Adjust seasoning with salt or more cumin if desired and serve.
