- 2 Cups Unsalted Vegetable Broth
- 1 teaspoon Ground Cumin
- 1 Cup White or Brown Rice
- Juice and Zest of 1 Lime
- Bring the broth and cumin to a boil.
- Add rice and stir. Lower heat to a gentle simmer and cover. Cook for 15 to 20 minutes until water is absorbed. Remove from heat and allow to rest for about 10 minutes.
- Add lime juice and zest to the rice and fluff with a fork until mixed. Adjust seasoning with salt or more cumin if desired and serve.
