4" Mini Pressure Cooker Cheesecakes

Ingredients
  • Making and freezing cheesecakes. These are 4" springform pans. I can fit four pans into one InstaPot.
  • One pressure cooker cheesecake recipe usually makes three 4" mini cheesecakes. Any left over cheesecake filling I just pour into a glass ramekin or two and pressure cook it and eat it as a "test taste" cheesecake ;)
  • I've already made and froze This Old Gal's Bourbon Pumpkin Pie Cheesecake. I did leave off the sour cream topping and will add it to the cheesecake when they are defrosted.
  • Ganache freezes well so I went ahead and topped the Peanut Butter Cup cheesecake from Pressure Cooking Today.
  • I've had great success by only cooking for ¾ the time the recipe states.
