Creamy Polenta with Caramelized Onions, Mushrooms & Kale
Ingredients
  • 1.25 cups yellow cornmeal
  • 4.25 cups water
  • 1 large onion, thinly sliced into half moons
  • 2 cups mushrooms, sliced
  • ½ bunch lacinato kale, chopped
  • 2 tbsp extra virgin olive oil
  • pinch of kosher salt and pepper
  • ½ tsp dried thyme
  • 3 tbsp butter (I used vegan butter substitute)
