  • 8 ounces mixed mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh thyme and/or sage, plus more for garnish
  • ¼ cup dry white wine
  • 2 tablespoons lemon juice
  • 1 cup part-skim ricotta cheese
  • ¾ cup grated Parmesan cheese, plus more for garnish
  • 4 cups baby spinach, coarsely chopped
