Mouthwatering Vegan Recipes™
Ingredients
  • 4 regular/medium zucchini (about 1¼lb /½kg), shredded/grated  (squeeze the mixture and dry with a towel to remove any excess water)
  •  
  • 1 medium sized onion, finely chopped
  •  
  • 1 cup firm tofu (can be found at this US link, or UK link)
  • 2 Tbsp parsley, finely chopped
  •  
  • 3 Tbsp all purpose flour
  •  
  • 2 cups dried breadcrumbs
  •  
  • salt to taste
  •  
  • 1 cup grated vegan cheese of your choice (I used my own homemade mozzarella from my book - Amazon US or UK)
  • 1 to 2 Tbsp nutritional yeast (can be found at this US link, or UK link)
