Easy Green Jackfruit Posole (vegan) (oil-free)
The salsa verde replaces the need to cook up onions and garlic and roast and peel green chiles so this recipe is pretty fast.
Ingredients
  • 1 17 oz can green jackfruit in brine
  • 1 29 oz can white hominy
  • 1 cup salsa verde
  • 1 tsp cumin
  • ½ tsp oregano
  • ⅛ tsp ground clove
Steps
  1. Drain the jackfruit and chop it up into small pieces
  2. Place in saucepan
  3. Add enough water to cover and simmer until the jackfruit is soft and most of the water is gone
  4. Use a potato masher or a fork and smash up the jackfruit so it's stringy
  5. Add salsa and spices and simmer 20 minutes
  6. Drain the hominy and add to the saucepan with about 2 cups water
  7. Simmer 30 minutes and serve
