Instant Pot Broccoli Cheese Soup
This uses up frozen Broccoli from your freezer!
Ingredients
  • 2 bags chopped broccoli
  • 3 cups chicken broth/stock
  • 1 tbsp poultry seasoning
  • 1 tsp garlic powder
  • Parmesan Reggiano cheese rinds (if you can find or have them)
  • Fresh ground pepper
  • ½ cup grated Parmesan Reggiano
Steps
  1. Put everything in pot.
  2. Set to 4 minutes manual then quick release.
  3. Remove the parmesan rinds.
  4. Use an immersion blender to blend the soup, add the grated parmesan cheese.
  5. Stir and serve.
Notes
  • I'm sure you could use fresh broccoli but my mission here was to use that frozen broccoli that had gotten lost in the freezer.
