Ingredients
  • Chicken or Turkey shredded
  • Chili Verde sauce large can
  • olives
  • 7 ounce can green chilies
  • onion chopped
  • cheese
  • cilantro
  • sour cream.
Steps
  1. Mix first 7 ingredients, except for the enchilada sauce, in a large bowl and then stir in sour cream
  2. Pour some green enchilada sauce into a 9x13 casserole dish
  3. Spoon some mixture into a flour tortilla, roll, and place seam side down in casserole dish
  4. Repeat
  5. Pour the balance of the sauce over the enchiladas, top with cheese, and bake at 350. These freeze beautifully so do a few trays.
Notes
  • I eyeball the mixture so there is a good balance of everything in each bite
