  • 1 bunch scallions
  • Zest of one lemon
  • 1 teaspoon lemon juice
  • 1⁄2 cup (1 stick) butter, at room temperature
  • subheading: For the Goat Cheese Polenta:
  • 2 1⁄2 cups no-salt added chicken or vegetable stock
  • 1⁄2 cup polenta (coarsely ground cornmeal)
  • 2 tablespoons butter
  • 2 ounces goat cheese
  • 1⁄4 cup grated Parmigiano Reggiano
  • Salt and pepper, to taste
