Badass Banana Bread (Engine 2)

Makes 1 loaf or 12 muffins
Ingredients
- 2 c whole grain flour (1 c. whole wheat, 1 c. oat flour)
- 1 tsp baking pwder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 3 brown-spotted bananas peeled and smashed (1 ¼ to 1 ½ cups)
- ¼ c 100% pure maple syrup
- ¼ c water
- 2 Tbl unsweetened apple sauce
- 1 Tbl vanilla extract
- 1 tsp apple cider vinegar
- 1 c add-ins of your choice: walnuts, coconut chips, raisins, non dairy chips.
- I added one small apple cut into small pieces....delicious!!
Steps
- Preheat oven to 400°. Line a loaf pan with parchment paper (or get non-stick muffin pan)
- In a bowl, combine the flour, baking powder, baking soda, cinnamon and nutmeg. In a large bowl, combine the bananas, maple syrup, water, applesauce, vanilla and vinegar. Mix the dry ingredients into the wet. Fold in the add-ins
- Pour the batter into the lined loaf pan (or divide among 12 muffin cups). Bake the loaf for 30 minutes (muffins for 15 to 18 minutes), until golden brown on top. Serve warm!
Notes
- I made my own oat flour by pulsing rolled oats in my food process to get as fine as I could (was not as fine as actual flour). An extra banana doesn't hurt :)
