Ingredients

  • super fast, easy and delicious- just water sauté the veggies in a non-stick wok and simmer the sauce and add it to the stir-fry and serve with brown rice

  • 1 cup dry soy chunks then rehydrated (or soy curls)
  • ½ red bell pepper
  • ½ green bell pepper
  • 1 carrot
  • ½ cup pineapple chunks
  • thumb of ginger, finely chopped

  • 1 cup pineapple juice (sub blended pineapple if you want to keep the fibre)
  • ⅓ cup brown rice vinegar
  • 3 tbsp liquid aminos/soy sauce
  • 3 tbsp tomato passata/ketchup
  • 1 tablespoon cornstarch dissolved in water
  • sweetener of choice to taste (i used a mixture of stevia and date paste - keep adding until it tastes perfect)

  • i also threw in a little apple cider vinegar and chilli powder to taste
  • subheading: to serve:
  • rice/noodles
  • toasted sesame seeds
