Vegan Sausage and Mushroom Etoufee
Ingredients
  • ⅓ cup unbleached white flour
  • 2 cups “no-chicken” or other vegetable broth
  • 1 medium onion finely chopped
  • 1 rib celery finely chopped
  • ½ green bell pepper stemmed, seeded, and finely chopped
  • 8 ounces mushrooms stemmed and halved
  • 4 cloves garlic minced
  • 1 teaspoon soy sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ¼ to ½ teaspoon cayenne pepper
  • ¼ to ½ teaspoon freshly ground black pepper
  • ¼ to ½ teaspoon freshly ground white pepper
  • ½ teaspoon dried basil
  • 14 to 16 ounces Italian Fauxsages or other vegan sausages, such as Tofurky, sliced thickly
  • 4 green onions scallions, sliced
