Uncle Allan's Green Beans
Easy But Apparently Only Allan Can Make Them

Ingredients
  • 12 oz green beans (i prefer Trader Joes haricot vert thin ones)
  • 1 Tablespoon Extra Virgin Olive Oil
  • ½ Teaspoon Kosher Salt (or a wee bit more)
  • ¼ Teaspoon Fresh Cracked Pepper (or a wee bit less)
Steps
  1. Start some water boiling to steam the green beans.
  2. If need be trim your green beans and snap any really long ones. TJ's Haricot Vert are fine as is.
  3. Once the steamer is going full blast. put the beans in the steamer, cover and steam on high for 4 minutes (skinny beans) or 5 minutes (thicker beans).
  4. You want them still a bit crunchy as 1) that is how they should be and 2) they will cook a bit more.
  5. Toss the cooked beans into a big bowl and coat them with olive oil, salt and pepper. See note below.
  6. Serve while hot and still crispy.
Notes
  • Olive Oil: I happen to like Colavita and it is available in most stores. Bertolli recently got a great review and I find it excellent as well. But don't use some crappy oil. Life is too short and it REALLY effects the results of this dish.
  • Amounts: I add way more of the oil, salt and pepper than most people would. But perhaps that's why mine are always better than yours? :)
