A Dietitian's Version of the Viral Jennifer Aniston Salad
  • subheading: For the Dressing:
  • 2 teaspoons lemon zest (~1 medium lemon)
  • ½ cup fresh lemon juice (juice of 3 to 4 lemons)
  • ⅓ cup extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon fine salt
  • ⅛ teaspoon black pepper

  • 2 cups cooked quinoa
  • 2 cups shredded or chopped cooked chicken
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 small cucumber, diced (about 1 cup)
  • ½ medium red onion, finely chopped (1 cup)
  • ½ cup finely chopped fresh Italian parsley (may sub fresh curly parsley or cilantro)
  • ½ cup finely chopped fresh mint leaves
  • 1 cup chopped roasted pistachios
  • 4 oz crumbled feta cheese (1 cup)
