Ingredients
  • 1 ripe avocado, peeled, pitted, and cubed
  • 1 roma tomato, diced
  • ¼ cup chopped red onion
  • ¼ cup chopped artichoke hearts
  • ¼ cup capers
  • 1 tablespoon chopped fresh cilantro
  • 3 cloves garlic, minced
  • ⅓ cup crumbled feta cheese
  • 3 tablespoons avocado oil
  • juice of ½ lime
  • sea salt and black pepper, to taste
Steps
  1. In a large bowl, combine all of the ingredients
  2. lightly toss until well combined.
  3. If time allows, refrigerate the salsa for at least one hour before serving. Doing this will allow all of the vibrant flavors in this salsa to really come together.
Notes
  • Serve w/grilled lime chicken
