Mancunian Vegan Lancashire Hotpot
Ingredients
  • 1 onion (peeled and finely chopped)
  • 200 g/7 oz swede or turnip (peeled and chopped)
  • 200 g/7 oz parsnips (peeled and chopped)
  • 4 carrots (peeled and sliced)
  • 1 garlic clove (crushed and chopped)
  • 2 lb/900 g potatoes (peeled and sliced)
  • 400 g tinned red lentils
  • 3 tablespoons pearl barley
  • 400 ml/14 fl oz vegetable stock
  • 1 teaspoon vegetarian soy sauce
  • 1 teaspoon dried mixed herbs
  • 2 tablespoon olive oil
  • 2 teaspoon plain flour
  • black pepper and salt to taste
