Servings: 38 to 45 pieces

1 pound Monterey Jack cheese 1 pound Monterey Jack cheese
2 packages frozen chopped spinach, thawed and drained 2 packages frozen chopped spinach, thawed and drained
1 heaping teaspoon minced onion 1 heaping teaspoon minced onion

Preheat oven to 350 degrees.
??? 10" casserole, melt butter in oven. Remove.
IN large bowl beat eggs; add flour, milk and seasonings. Mix well. Add cheese, thawed spinach and onion. Pour all into oblong baking dish and bake 35 minutes.
Remove and cool 45 minutes to set. Cut into bite-sized pieces.
To freeze, place on cookie sheet. When frozen. transfer to plastic bag. To reheat, bake at 325 degrees for 12 minutes.
