  • ½ cup grated parmesan cheese, plus extra for garnish
  • 3 tablespoons olive oil, divided, plus extra for garnish
  • 2 large chicken breasts, butterflied ( or 4 small breasts totaling 1 ½ lbs)
  • 1 (24 oz) jar marinara sauce
  • 4 oz fresh mozzarella, sliced
  • ¼ cup fresh basil leaves, torn, for garnish
