Easy Instant Pot Chicken and Rice

Ingredients
  • 2 large chicken breasts, diced into bite size pieces
  • 2 regular size boxes chicken Rice-a-Roni (Aldi brand is fine too)
  • salt, pepper, onion powder, parsley flakes
  • 1 can cream of chicken soup
  • 3 ⅓ cups water (I used hot water)
Steps
  1. Season the chicken and saute with a little butter or olive oil for a few minutes (this step is optional, you can just put the chicken in raw and go to step 3).
  2. Deglaze well, making sure that nothing is stuck on the bottom.
  3. Add rice, rice seasoning packets and water and stir.
  4. Pour the cream of chicken soup on top and don't stir.
  5. Cook 4 minutes manual or pressure cook, NPR for 9 to 10 minutes and then QR any remaining pressure.
  6. Mix well and serve.
