  • 1 tablespoon fresh thyme, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup ( 60 ml) vegetable stock
  • 2 cans (14 oz / 400 g) crushed tomatoes
  • A pinch of sugar
  • 1 lb ( 450 g) gnocchi
  • ⅓ cup ( 30 g) plant-based Parmesan, grated
  • 6 to 8 fresh basil leaves, roughly shredded
