Lima Beans

Ingredients
  • 4 cup fresh Lima Beans
  • 4 cups water
  • 2 ounces fat back (salt pork) sliced thin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
Steps
  1. Rinse beans, picking out any bad ones
  2. In a heavy covered saucepan, bring water and fatback to a boil. Add beans and salt. Simmer, tightly covered, for about 20 to 30 minutes. Add water if pan begins to boil dry.
