Keto "Bounty" inspired custard... sugar free
If you cannot find Bounty bars or do not want to eat so much sugar, this treat will more than fit the bill.

Servings: 8 x 125 ml jars

Ingredients
  • 1 can coconut milk
  • 100 g coconut coffee flavouring
  • Enough milk to equal
  • 500 g liquids
  •  
  • 4 large eggs
  • 70 g sugar or Krisda
  • 1 scant tablespoon Xanthum gum
  • Pinch salt
  • 10 g vanilla flavouring
  • 20 g unsweetened cocoa
  • 20 g butter
Steps
  1. Combine coconut flavouring, coconut milk and other milk to make 500 grams and add to high speed blender.
  2. Add all other ingredients to same blender and blend until steam escapes from vented lid, about 6 minutes. Should be slightly thickened.
  3. Pour into small jars and chill.
Notes
  • You simply must try using different coffee flavourings, you will have an entirely new world open up. Be sure to switch out the coconut milk to evaporated milk though.
