Ingredients
  • 400g dried pasta shapes (spirals, shells or penne are ideal)
  • 1 tablespoon vegetable oil
  • 1 large onion peeled and chopped
  • 1 red capsicum de-seeded and chopped
  • 1 yellow capsicum de-seeded and chopped
  • 400g canned tuna in oil (albacore tuna if possible) drained and flaked
  • pinch of salt and pepper (or lemon pepper)
  • 2 cloves garlic peeled and minced
  • 2 tablespoons tomato puree
  • 1 teaspoon dried oregano or basil or both
  • 800g tinned chopped tomatoes
  • ½ cup double (heavy) cream
  • ½ cup parmesan cheese
  • 1 cup (100g) strong cheddar cheese - grated
  • 1 cup (100g) mozzarella - grated
  •  
  • Small bunch parsley - roughly torn
