Ingredients
- subheading: SSAMJANG:
- 4 Scallions - whites and light green parts chopped fine
- ¼ Cup doenjang
- 1 Tbs gochujang
- 1 Tbs water
- 2 tsp sugar
- 2 tsp toasted sesame oil
- 1 minced garlic clove
- subheading: SAUCE FOR BULGOGI:
- ¼ cup onions
- ¼ cup sugar
- 3 Tbs soy sauce
- 4 cloves garlic
- 1 Tbs sesame oil
- ¼ tsp pepper
- subheading: KIMCHI:
- 2 teaspoons sesame oil
- 1 cup chopped kimchi
- 1 teaspoon sugar
- subheading: VEGAN MEAT:
- Soy curls, soy chunks, Impossible ground, tofu, TVP, Omnipork strips, and seitan are all good
Steps
- subheading: SSAMJANG:
- Mix ingredients and set aside for a topping
- subheading: KIMCHI:
- Heat sesame oil in small skillet over medium high heat. Add kimchi and sugar, and cook, stirring constantly, until caramelized and heated through, about 3 to 5 minutes; set aside.
- subheading: VEGAN MEAT:
- Sautee but do not brown
- Add marinade
- Add bullion if the sauce needs to be thinned.
- Add Scallion greens and cook until warm but still crisp.
- Serve with lettuce to wrap or tortillas for tacos, kimchi, and ssamjang. Sriracha mayo can be used too.
