Bulgogi for Korean Tacos

Ingredients
  • subheading: SSAMJANG:
  • 4 Scallions - whites and light green parts chopped fine
  • ¼ Cup doenjang
  • 1 Tbs gochujang
  • 1 Tbs water
  • 2 tsp sugar
  • 2 tsp toasted sesame oil
  • 1 minced garlic clove
  •  
  • subheading: SAUCE FOR BULGOGI:
  • ¼ cup onions
  • ¼ cup sugar
  • 3 Tbs soy sauce
  • 4 cloves garlic
  • 1 Tbs sesame oil
  • ¼ tsp pepper
  •  
  • subheading: KIMCHI:
  • 2 teaspoons sesame oil
  • 1 cup chopped kimchi
  • 1 teaspoon sugar
  •  
  • subheading: VEGAN MEAT:
  • Soy curls, soy chunks, Impossible ground, tofu, TVP, Omnipork strips, and seitan are all good
Steps
  1. subheading: SSAMJANG:
  2. Mix ingredients and set aside for a topping
  3. subheading: KIMCHI:
  4. Heat sesame oil in small skillet over medium high heat. Add kimchi and sugar, and cook, stirring constantly, until caramelized and heated through, about 3 to 5 minutes; set aside.
  5. subheading: VEGAN MEAT:
  6. Sautee but do not brown
  7. Add marinade
  8. Add bullion if the sauce needs to be thinned.
  9. Add Scallion greens and cook until warm but still crisp.
  10. Serve with lettuce to wrap or tortillas for tacos, kimchi, and ssamjang. Sriracha mayo can be used too.
