Skinny Lemon & Blueberry Muffins
Ingredients
  • ½ cup vanilla protein powder (see this blog for how to choose the right one)
  • ⅓ cup almond flour
  • ⅓ cup coconut flour
  • 2 tbsp white sesame flour (can sub for extra almond flour)
  • 2 tsp baking powder
  • Pinch salt
  • ⅓ cup stevia
  • ½ cup egg whites
  • ¼ cup almond or coconut milk
  • 2 tbsp unsweetened apple sauce
  • ¼ cup almond butter (65g)
  • 1.5 tsp vanilla essence
  • Juice and rind from ½ lemon
  • 1 cup blueberries
